Fried Green Plantains


Green plantains is a popular Jamaican staple. It is widely used right across the country. Fried green plantains are popular and loved by many. This side dish is mostly used for breakfast along with any protein you see fit, but mostly with calaloo, or ackee and saltfish.

Fried green plantains is easy to prepare and very tasty once done right. The secret is never to let the plantain go cold.

Ingredients for Fried green Plantains

3 green plantains, peeled
a pinch of salt
1/3 cup of vegetable oil

Notes: You will need a skillet with a cover. Reserve plantain skin for pressing.


How to fry plantains



Peel your green plantains and cut them in two or three, depending on their size.

Place them in a bowl and add a pinch or two of salt. Rub the salt in.

Place your skillet on medium heat and add oil, Let the oil warm and then add your plantains. Don't let  oil get hot. Turn flames on medium low and cover. Allow plantains to fry on low flames. This allows the plantains to steam while frying. You will hear when the oil gets hot enough.

After about 10 minutes, turn plantains, they should be golden. Let other side cook for another ten minutes or so or until golden.

If you reserved the skin of the plantain get ready to start pressing with the heel of the hand. Be careful as this will be hot. Alternatively, get a plate and a strong fork.

Place one piece of plantain between skin and press until desired flatness. Personally I don't like mine too flat. Return pressed plantain to skillet and do the same with all the pieces of plantain.

If you are using a fork and plate, press down gently with the fork.

Let pressed plantains cook on each side for about two minutes and remove from heat.

Note: if the fire is too low increase heat just a tad, but remember, the best way to make this dish is by using low heat.
