Chicken Soup

Ingredients:

2lbs chicken, skin removed and cut into chunks
1 lb pumpkin, diced
1/4 lb carrots, sliced thickly
1 cho-cho, diced (also known as chayote or pear squash)
1/2 lb potatoes, cut in large dices
1 lb yellow yams cut into chunks
small round dumplings (see post on how to make dumplings)
1 packet cock soup or chicken noodle soup
1 stalk scallion
4 garlic cloves, smashed
1 large branch fresh thyme
1/2 teaspoon pimento seeds
1 green scotch bonnet pepper
salt to taste

Method
In a large soup pot fill up with 8-10 cups water. Add garlic and pimento seeds and bring to a boil. Add chicken and pumpkin. Cover and cook until pumpkin starts to mash. You can also help it along by mashing the pumpkin with a large spoon when it is soft enough. We put the chicken when the water is boiling to reduce the scum build-up.

**If your water has evaporated add enough to cover your ingredients at all point throughout the cooking process. Your water should cover the ingredients to about an inch or two above.

Add your carrots, cho-cho and potatoes and let cook for ten minutes. Now add your yellow yams and dumplings. At this point you will add your scallion, thyme and soup packet. taking care to stir as you add the soup packet to prevent lumping. A safe way would be to dissolve in a little water before adding to the pot.

Add the green scotch bonnet taking care not to break it. The green scotch bonnet adds flavor without the heat so don't worry about it, just take care not to break it.

Salt to taste, cover and let simmer on medium, stirring frequently until your soup has nice rich consistency.

    1. Yes you can certainly prepare the soup without the pumpkin. If you like yellow squash you can use that or omit it altogether.
