Goat Soup aka Manish Water

Ingredients

  • 1 goat's head - bone removed using flesh alone. Also remove the brain. (optional)
  • 2 goat's feet chopped into pieces
  • 1 - 2 lbs goat meat diced (see more possibilities on post page)
  • 1 lb potatoes diced
  • 1 lb yellow yams cut in large chunks
  • 6 young green bananas thinly sliced in the skin ( to avoid discoloration slice just before ready to use)
  • 1 ram goat noodle or chicken noodle soup packet (your preference or if you can't get the ram goat noodle)
  • scallion
  • thyme
  • pimento seeds
  • garlic
  • scotch bonnet pepper
  • salt
  • very tiny dumplings
Method

Cleanse your goat meat by rinsing them under the tap. Your ram goat head should have been prepared earlier by someone who knows how to remove the bones. If you can't get the goat's head then just use the meat.

Fill your sup pot halfway with water and put to boil on high flames. Add your goat meat and other parts, a tablespoon of pimento seeds and six garlic cloves which have been smashed.

Cook until your meat is tender. If water has evaporated then fill it back up and bring to a boil then add the, potatoes, yams, sliced green bananas and dumplings. 

To you soup add 1 large branch of fresh thyme, 2 - 3 stalks of smashed scallion, 1 green scotch bonnet pepper (do not burst open the pepper!). After which you add your noodle packet ingredients. Salt to taste and let simmer on medium low until ingredients are cooked and your soup has reached a nice consistency.

Remove from flames and serve.

This recipe serves 8 bowls
Prep time - 30 minutes
Cook time - 2 hours (approximately depending on the tenderness of the meat)
Ready in - 2 1/2 hours
