Jamaican Roast Fish

You will need:


  • 2 serving size fish of you size or weight.
  • 1 tablespoon butter
  • 1 cup sliced okra or callaloo
  • 1 small brown onion, minced
  • 2 stalks scallion, minced
  • 1 scotch bonnet pepper, minced
  • 1 large sprig fresh thyme, chopped
  • 1 fish noodle packet mix or fish spice or chicken noodle packet mix (your choice)
  • Black pepper and salt to taste
  • Aluminium foil
  • Grill
Method:

Preheat your grill to medium high.

Cleanse your fish if it is not yet scaled and gutted. Rinse with some lime juice or vinegar solution. Pat dry with  paper towels. Slit both sides of fish diagonally and season fish with salt and pepper.

In a bowl, combine all other ingredients. Stuff the fish and wrap in greased aluminium foil. Do not wrap too tightly but secure edge of foil by folding tow or three times.

Place on grill and cook on each side for 15 - 20 minutes per pound of fish. You may also check you fish by using the finger to press down on the foil.. You will feel the tenderness of the fish. You may also open the foil and check with a fork. Fish will flake easily if cooked.
