Easy Tofu Curry Recipe


Here is an easy tofu recipe that is tasty and healthy. My fiance didn't eat tofu before because he heard such negative things, especially about the taste or the lack thereof. However, since I started making tofu he is now hooked.

His favorite tofu recipes are: sweet and sour, spicy fried and this one, the curried tofu. Please enjoy.


Ingredients

1 package firm tofu (about a pound)
3 pieces fresh turmeric root - shredded
3 cloves garlic - chopped
2 stalks scallion - chopped
1/2 medium onion chopped
1/4 cup sunflower or vegetable oil
1 flat teaspoon cornstarch
1 sprig fresh thyme
Pepper and salt to taste
All purpose or your preferred seasoning

How to prepare the tofu:

Put 2 - 3 cups of water to boil with 1/4 teaspoon of salt. Dice your tofu in chunks (about an inch). Boil tofu for 3 - 5 minutes and then remove from flames, place in colander and run under tap water until cool. In a bowl, place the tofu and sprinkle with all purpose or your favorite seasoning, toss.

In a skillet, heat oil and fry tofu until golden. Remove from oil. Drain oil from skillet and leave about three tablespoons. On low flames saute chopped scallion, onion, garlic and turmeric for a minute. Turn flames down to low and cover. Let cook for three minutes on very low flames. 

After three minutes add fried tofu to seasoning and turn the over to coat them through. Add two cups water and thyme, then bring to a boil. Dissolve cornstarch in small amount of water and stir.

Turn flames to medium low, cover and let simmer for a few minutes.

Salt a pepper to taste. Add more seasoning if you wish.

Remove and serve with rice and vegetables.


Options:

  • Add hot peppers for spicy curry
  • You don't need to fry tofu
  • You can use regular curry powder
